Pudina Vada / Mint Masala Vada

Pudina Vada or Mint Masala Vada is yet another fritter variety made from lentils with mint leaves. Easy vegan snack  to prepare. A quick flavorful bite for your evening tea.

Pudina is a herb commonly used in Indian cooking. It is used in a variety of dishes such as chutneys, raitas, and salads. It has a refreshing taste and aroma along with many health benefits.


Ingredients
Mint Masala Vada, Pudina vada
Mint Masala Vada
  • 1 cup Channa Dal
  • Hing-pinch
  • 5-6 Green Chillies 
  • Ginger-shredded
  • Salt to taste
  • 2 tbsp grated coconut
  • Few Coriander leaves
  • Onions(Optional)
  • Fresh Pudina/mint leaves
  • Jeera-1tsp
  • Oil for deep frying


Method:  Soak Channa Dal for half an hour. 
Next grind soaked channa dal with jeera,salt, green chillies, hing very coarsely with very little water. 
Next add grated coconut , chopped coriander leaves, chopped pudina leaves , onions  and salt to the mixture and mix well.

Make small balls and flatten it.  Set it on a plate.In a kadai, heat  oil ,  slowly slide in the ambodes , deep fry till golden brown on both sides.
Drain on absorbent paper.

Serve Pudina Vada hot with chutney or sauce or enjoy just like that with hot cup of tea or coffee.

Mini Crackers / Mathri

Mini Crackers / Mathris is a simple mildy spiced snack for your evening tea.Kids will love it too.Healthy bites to satisfy the in-between hunger cravings.Enjoy !


Ingredients
Mini Crackers / Mathri

  • 1 cup Maida 
  • 1/2 cup Wheat Flour
  • 1tsp Salt
  • 1 tsp Carom seeds (ajwain) 
  • 1/2 tsp jeera
  • 2 tbsp butter/ghee
  • 1tsp crushed pepper corns
  • Water (for kneading)
  • Oil (for frying)


 Method: In a bowl,mix the flour with items mentioned above except oil and form a dough.Cover and let it  rest 10-15mins.Make small round shaped crackers using cutter and prick it with a fork.
Heat sufficient oil in a pan. Carefully slide in the mathris and deep-fry well on medium heat.Drain on an absorbent paper. Enjoy with a hot cup of tea or just like that.

Ugadi / Gudipadwa

  Ugadi is the New Year as per the Hindu Calender. It means starting of a new Yuga or period. This festival normally comes during the month of March or April.People from all over Karnataka and Maharashtra celebrate this festival with much enthusiasm and splendor In Maharashtra , the festival is known as Gudipadawa.
      People decorate their homes ,front door and puja rooms with flowers, rangoli and Mango leaves.(Toran) . Food, as always occupies an important place in this festival too. Special dishes are prepared and enjoyed by everyone in the family .People go to temples , take blessings from elders. An important part of Ugadi festival in Karnataka is "Bevu Bella" . People eat  jaggery  and neem leaves together in this festival to mark the presence of sweet and sour events in their lives.On the next day of Ugadi people go to temples,wear new clothes.

Vegetable Corn Rice

Vegetable Corn Bhath or Rice is a  healthy combination of mixed vegetables and sweet corn.Enjoy! An easy one pot meal -healthy and comforting !

Ingredients
Vegetable Corn Rice
Vegetable Corn Bhath

  • 1 cup rice
  • 1 cup chopped mixed vegetables, boiled
  • (beans,Potatoes)
  • ,carrot grated,capsicum-fried)
  • 1 onion, chopped (opt)
  • 1 tomato chopped(opt)
  • 1 cup steamed corn
  • 1/2 tsp. mustard
  • 1/2 tsp.chana dal
  • 1/2 tsp. urad dal
  • Hing-Pinch
  • Curry leaves-few
  • 1/2 tsp. turmeric powder
  • 1 tbsp. lemon juice
  • 2 tbsp. oil
  • Salt to taste
  • 2 tbsp. Bhath Powder
  • Fresh grated coconut-2 tbsp


Method-Cook rice and Spread it on a plate.Heat oil fry peanuts and keep it aside,next add mustard seeds, after it splutters ,add chana dal,urad dal,hing,curry leaves, turmeric and fry until golden brown.Add the vegetables and stir fry well.Next add the steamed peas,corn,grated carrot and bhath powder, salt and mix well.Add rice, and mix well.Garnish with coconut.Serve hot with raita or papad or enjoy just like that.

Pepper Poha or Menasu Avalakki

Pepper Poha or Menasu Avalakki is very simple and easy to prepare.It has a nice  spicy flavor .Poha (oggarane avalakki ) or seasoned rice flakes are healthy and easy to digest too, just right for all ages.


Ingredients
Pepper Poha 

  • 1 cup poha (flaked rice /avalakki) 
  • 1 tbsp. oil
  • 1/2 tsp. mustard seeds
  • 1/2 tsp jeera
  • 1/2 tsp. Chana dal
  • 1/2 tsp. Urad Dal
  • 1/2 tbsp Peanut
  • Pepper/Kalamiri-5-6
  • Jeera-Pepper pwd-1/2 tsp
  • Few curry leaves
  • Hing-pinch
  • Salt to taste
  • 1 tbsp. grated fresh coconut (opt)
  • Red chilies-1 -2



Method
Soak the poha in water for 5 minutes. Wash thoroughly and drain the water completely.Heat oil in a pan, fry peanuts and keep it aside then add mustard seeds, after it splutters, add chana dal/urad dal ,jeera, hing ,red chilies and stir fry.Add pepper corns, curry leaves. Add soaked avalakki, salt ,pepper pwdand mix well.Add coconut and mix carefully.Serve hot.

Carrot Methi Paratha

Carrot Methi Paratha is easy wholesome breakfast recipe-a healthy start of your day.Made from Methi aka Fenugreek leaves with carrots , it is colourful and tasty easy lunch box recipe.

Ingredients


  • 1 cup  wheat flour
  •  2-4 tbsp yogurt/curds
  • 1/2 tsp  Jeera /cumin seeds
  • 1/2 tsp Ajwain/carom seeds
  • 1 /2 tsp turmeric 
  • 1 -2 tsp chilli powder/garam masala
  • 1/2 tsp jeera dhania powder
  • 1 cup finely chopped fenugreek/Methi leaves
  • 1 cup grated carrot
  • 2 tbsp oil
  • salt to taste
Method
In a bowl combine all the ingredients with the flour ,add yogurt  and knead into smooth dough,add little water if req.Add oil and knead it again and keep it covered for sometime.Make parathas.Heat a skillet (tava) gently, put in the paratha, add oil ,turn on both sides till done.Serve  hot with pickle or curds.

Palak Peas Pulao

Palak Peas Pulao is a interesting combination of Green Palak /Spinach with peas blended with spices and coconut. A healthy and nutritous one pot meal. 

Spinach or Palak provides healthy nutrients and is rich in iron, vitamins and minerals. It is very important for overall health including skin, hair etc. It is one of the immunity booster foods.


Ingredients: 
Palak Peas Pulao
  • Palak soppu/ Spinach Leaves- 2cups
  •  Green Peas/Moong - 1/4 cup steamed
  • Green chillies - 3-4
  • Coconut, grated- 1/4 cup
  •  Cinnamon - 2 small pieces
  • Clove - 1-2
  • Jeera/Cumin seeds - 1/2 tsp
  •  Pepper - 2-3
  • Coriander leaves -1/4 cup
  • Rice - 1.5 cups
  • Cashews - few
  • Salt to taste
  • Tej patta/bay leaf-1-2
  •  oil - 2 tbsn
Method-Cook the rice and spread on a plate.Clean,Chop and cook the palak . In the mixer add coconut, spinach, jeera, cinnamon, pepper ,green chillies, coriander leaves, clove , add water and grind into smooth paste. Next in a large pan heat oil add jeera , cashews, tej patta and fry well . Next add masala paste and fry ,add  the cooked rice ,peas and mix well.Add salt and mix . Serve hot with dal or raita of your choice.

Rice Sevai Upma

Rice Sevai Upma is enjoyable healthy filling breakfast recipe.A perfect start for your busy day.


Ingredients:
· 2 cups rice vermicelli
· 1/2  cup simla mirch chopped
Rice Sevai Up
· 1 onion chopped 
. 1 carrot chopped
.1/2 cup steamed peas

Seasoning

· 4-5 green chillies chopped
. few-Groundnuts
· few curry leaves
· 1 tbsp oil
· 1/2 tsp mustard seeds
.1/2 tsp jeera
· 1 tsp urad dal
· 1 tsp channa dal
 .Turmeric-pinch
. Hing-pinch
· Salt for taste
· Water

Garnishing
· 1-2 tbsp grated coconut
· Few coriander leaves


Method:
  • Boil water in a vessel.In a bowl add the rice sevai ,add the hot water allow to rest for 5-10 mins. Next in a kadai , add oil,fry the cashews and keep it aside. Next add mustard seeds, followed by urad dal, channa dal ,and jeera, hing, curry leaves, chopped chilies, turmeric and sauté well. Now, add vegetables and stir fry well .Strain the vermicelli and add to the kadai,add salt  .Mix well.Add the fried cashews and mix well.Garnish with coconut.Serve hot.
